How difficult is it, and what's the cost I should be looking at in parts alone.

It all depends on what you want to do. New 31 spline axles are $100 each bearings and outer axle seals are $50 per side gears are $125 then the most difficult decision is what kind of third member you want arb,detroit,limited slip, or solid locked rear end. The most economical is the factory ford limited slip. $-)
